The producer
Caseificio Fior di Lattari
Agerola, Campania
Provolone del Monaco, caciocavallo and pecorino aged in caves.
On the Agerola plateau the milk arrives every morning from small mountain farms and becomes stretched-curd provolone and caciocavallo.
The cheeses age for months in cool caves: the rind grows thin, the taste bold and slightly spicy.
